Peanut Butter Choc Chip No Four Gluten Free Biscuits

I had seen this recipe in the Healthy Food Guide and initially dismissed it. I just couldn’t see how my biscuits would come out looking like the ones in their photo (and they didn’t as I slightly over did them). I also don’t have a gluten problem, so I don’t have any real need for gluten-free baking.

My guy is not a fan of peanut butter either, so there was not much point in baking these.

Well several things changed my mind:

  1. My sister mentioned she’d had some peanut butter and choc chip biscuits that were delicious – I immediate remembered the recipe I’d seen in HFG and dug it out. She confirmed that’s probably the one’s she’d been enjoying.
  2. In a fit of healthy living I bought low salt, low sugar, Peanut Butter – and was never using it as I didn’t like the lack of taste. So thought this would be an excellent excuse to get rid of our surplus peanut butter.
  3. My new goal is to try out new recipes and not to be afraid to fail
  4. My guy announced that he rather liked my peanut brownies – but only mine mind you, so I thought perhaps he’d like Peanut Butter biscuits too

So here’s the process:

For the actual recipe, visit the Healthy Food Guide website – note this recipe differs very slightly in that they are using chocolate chunks. In the printed recipe (September 2011) they used choc chips.

As you can see from the photo below, there are not many ingredients. I deviated from the ‘smooth’ peanut butter, as I only had crunchy and thought it would not make too much of a difference.

Once I got everything in the bowl and mixed up I was quite worried the mixture was too wet. I think the egg I used was quite big.

Once I’d given it all a good mix up it was looking more promising.

The recipe says to shape the mixture into balls using your hands – I didn’t do that, instead I used a spoon and teaspoon to shape them and put them on the tray.

I cooked them for 10 minutes, took them out and thought they needed a bit longer as they were still a bit soft inside. I think I may have slightly over done them though, as they hardened up after resting.

My cookies are a bit darker than the photo in the HFG Guide. So if baking them, probably best to stick to the 10 minutes exactly.

As for taste – well they smelled wonderful cooking, and though they are quite nice, they won’t be a regular in our household as we are not big fans of peanut butter. So these cookies will be given away to someone I know who can do with a bit of cheering up and loves eating!
